How to make broth

【Ingredients】
  • Thin Shavings 30g
  • Water    1ℓ
  1. Boil the water in a pot.
  2. Put the flakes(thin shavings) in the boiled water at once.
  3. Boil for one minute and turn off the heat. Wait for a few minutes to see the flakes sink.
  4. Drain the broth in a strainer.





How to make a Japanese rice seasoning

【Ingredients】
  • Used up flakes from the first Dashi
  • Sugar   1 teaspoon
  • Sweet Sake 1 teaspoon
  • Soy Sauce  1 teaspoon
  • White Sesame 1~2 teaspoons
  1. Put the used up flakes in a pan on medium heat.
  2. When the flakes become almost dried, turn the heat low and put the sugar, sweet sake, and soy sauce and mix.
  3. When the condiments are well mixed, turn off the heat.
  4. Sprinkle the sesame over the flakes.





*This recipe is common to bonito flakes, Soda bonito flakes, and mackerel flakes.
